  • Organic Sencha from Nearai Shizuoka, Shizu-Inzatsu 131

    This single cultivar, single origin sencha is made using the Shizu-Inzatsu cultivar that was developed in the 1940s. Made by Tarui Tea Farm, the tea is super refreshing with a fresh, spring vegetal crispness and a lightly floral jasmine note that is indicative of the cultivar. The floral character really comes out with hotter water, but we prefer using cooler water for this tea to keep the astringency in check. This is not a tea that accentuates umami or heaviness, even though it underwent a fukamushi-style steaming. Rather, this organic sencha is light and fragrant and is a fun departure from traditional umami-heavy teas.
